Kirby's Quick, Easy, & Good Grilled Yellowfin Tuna Steaks
Tuna Steaks

Garlic
Thaw the tuna steaks. Marinade in a mixture of olive oil, dill, and garlic for 20 minutes.
Get the grill super hot, the goal is to sear the steaks.
Place the steaks on the grill.
For rare, sear on each side for one minute while basting with the leftover marinade.
For medium, sear for 2 minutes on each side while basting with the remaining marinade.
Plate up any side dishes, then hit the tuna with a little more marinade when you take it off the grill. Serve it hot. YUMMY!
Smoked Fish Dip
1 Cup Sour Cream
1/2 Cup Mayonnaise
1 Cup Smoked Fish - Flaked
3 Tbs. Chopped Green Onion
1/2 Tsp. Worcestershire Sauce
Dash of Garlic Powder
In a small bowl, blend sour cream and mayonnaise with a wire whip. Stir in remaining ingredients. Cover and refrigerate for at least 1 hour.
To dress it up for guests, top it with a few chopped onion tops.

Onion
Beat one egg with milk to make an egg wash.
Dip turtle pieces in the egg wash, and then into flour that has been seasoned with salt and pepper.
Brown the pieces in a skillet with cooking oil over medium heat for about 8 minutes.
Slice thick pieces of onion, and lay the slices in the bottom of a baking dish. The onion does not add an overpowering flavor to the turtle, it just aids in keeping the turtle moist.
Add water so that it covers half way up on the onion slices.
Lay the pieces of browned turtle on top of the onion.
Cover and bake at 350 for 1 1/2-2 hours.
Check for tenderness with a fork. The turtle is NOT done until it is fork tender, and falling off of the bone like ribs.
More time might be necessary, depending on the size of the turtle.
For a crispier product, take the cover off for the last 30 minutes of baking.

Then, place them, panko side down, in some oil and butter on medium-low heat until they are golden brown.
Transfer them to the oven for 10 minutes on 300.
