Smoked Fish Dip
1 Cup Sour Cream

1/2 Cup Mayonnaise

1 Cup Flaked Smoked Fish

3 Tbs. Chopped Green Onion

1/2 Tsp. Worcestershire Sauce

Dash of Garlic Powder

In a small bowl, blend sour cream and mayonnaise with a wire whip.  Stir in remaining ingredients.  Top with a few chopped onion tops, to dress it up for guests.  Cover and refrigerate at least 1 hour.  Serve with assorted chips or crackers.


The Best Turtle Recipe

Beat an egg with milk to make a egg wash.
D
ip turtle pieces in egg wash and then into flour that has been seasoned with salt and pepper.
Brown pieces in skillet with cooking oil over medium heat.. This takes about 8 minutes.
Now slice thick pieces of onion and lay the slices in the bottom of a baking dish. The onion does not add a lot of onion flavor, it just keeps the turtle moist.
Add just enough water to cover half way up on onion slices, Lay the pieces of browned turtle on top of onion.
Cover and bake at 350 for 1 1/2 hours to 2 hours.
Check for tenderness with fork. The turtle is NOT done until it is fork tender and falling off the bone. (like ribs).
More time might be necessary, depending on size of turtle. For crispy , take cover off the last 30 minutes.


Kirby's Quick, Easy, & Good, Yellowfin Tuna Steaks on the Grill

Thaw and then marinate the tuna in olive oil, dill and garlic. This only takes 20 minutes.
Get grill super hot, we want to sear the steaks. Place tuna steaks on grill.
For rare sear on each side one minute, basting with left over marinade as you go.
For Tuna medium, go 2 minutes each side.
Have all your side dishes plated up, when the tuna comes off the grill, hit it with a little more marinade and serve it hot! YUMMY!
